It is a true miracle I am able to use my fatty fingers to type. I am seriously stuffed, I ate like a convict’s last meal!! The pumpkin cupcakes turned out okay but *and I’m not saying this as a plea for a cake mixer* the recipe totally written for preparing the ingredients with an electric mixer. I tried to use my whisk but it was bloody hard to whip butter so there were big chunks of butter in the batter. Anyway, I tried to “make it work” but I definitely think the mixer would have made a difference in the outcome.
Sorry, I am spent and I have to wake up at 4am to shop. Hopefully, I’ll be the proud owner of this baby by tomorrow.
